It's said that if you will to change your hard drive to a bigger one, it should be a 5400 rpm model due to overheating problem (faster HD exhales more heat), and sometimes such disk just don't work with PS3 like it should. Ano no, theres no difference when using 7200 rpm drive in PS3.
PS. The best option is to buy PS2. :) It's very cheap these times, and remember that not 100% of PS2 games works on backward-compatible PS3.
