Editing textures is easy, you just edit your own textures over the original textures (as seen here):

And then put a zip version of everything into the MC texture folder.

There are more complicated things but editing the terrain file is the biggest and easiest part.

but I kinda was meaning I'd try to make green hill zone without modding the game
but that brings up a question, if you play this game with others, so do they see the same

Unfortunately no, textures are "client-side only" in servers so if you're using a texture pack online, everyone else will see it differently if they have a different texture pack on.

Aether mod just got released. Pretty much adds in another "realm" like the nether but a crap load better with tons of new stuff. It's been a WIP for a couple of months now and it's made by some of the best modders in the mc community so should be good.

Just use 7-Zip. It's pretty much the same thing, allowing you to access archives and extract files. It's a great free alternative and it's works fine for me.
